Paterson sticks to vegan snacks and drinks, using aquafaba for sours and making its own vegan chorizo in-house

Potato pierogies, Impossible meatball subs, and poutine have arrived at a new NE 28th bar.
Open since early November, Paterson specializes in vegan comfort food, made with a combination of vegan proteins. For instance, the restaurant makes its own version of chorizo with textured vegetable protein, which arrives on nachos with house-made chips and in tacos with slaw and pickled red onion. The vegetable protein also serves as the foundation for sloppy joe’s, first soaked in beer before it’s added to a bourbon-tomato sauce with diced green pepper and caramelized onion. The menu is rounded out by a selection of classic bar snacks, including poutine with mushroom gravy, pierogies served with apple sauce, and a handful of sandwiches and salads.
Paterson comes from Florida Room cofounder Patricia Earley, who wanted to open a bar solely dedicated to vegan bar snacks, live music, and stiff drinks. The bar menu has a number of house cocktails often incorporating vegan substitutes; for instance, the bar uses almond milk cream for various drinks, as well as aquafaba — the liquid from a can of chickpeas — for egg-white-style foam. Paterson, located at 108 NE 28th Avenue, is open from 4 to 11 p.m. Mondays through Thursdays, 4 to midnight Fridays, 3 to midnight Saturdays, and 3 to 11 p.m. Sundays.
